GOOD MORNING CREPES

The Sunday morning last minute breakfast
I woke up this morning early with my wonderful little man and decided that daddy deserved a day to sleep in, and by sleep in I mean not wake up between 6-7 am like every other morning.  Our son is an early riser.  So we got dressed and went for a nice long walk.  We got home and it was still somewhat early and I kind of kicked myself for not getting something for a quick breakfast while I was at Fry's the night before.  So of course.. I made crepes!  Now.. Crepes are made of relatively common ingredients, I really don't do the whole "home made" anything, very often.  But the ingredients for crepes are still pretty generic that most kitchens have it. They're really tasty in my opinion (especially with peanut butter and syrup! ) and easy to make.

I got the ingredients and instructions from Design Sponge (found on pinterest of course)



Ingredients
2 eggs
1 cup of flour (I add in 1 more cup at the end of the recipe)
Salt (I literally just pinch it and throw it in.)
2 cups of milk
2 tbs of butter (melted

Mix eggs, flour and salt

Mix together with butter and you get some lumpy looking texture

Add in milk, make sure you mix up good to get rid of all those pesky little lumps

Have an adorable helper assist you in wisking

Now this is where I always have to add about another cup of flour
Crepe batter is suppose to be thin.  Much thinner than pancake batter
But mine always seems to be pure liquid, so I thicken it to what I feel comfortable with
Thinner than pancake batter but still slightly thicker than.. well water haha

They cook fast since they're so thin

And the sides are usually a little lighter than these..
BUT it always takes me a few attempts before I stop "browning" the crepes haha

SO.. The boys love them, even though the first time I made them for my fiance he made fun of a fluff-less flat pancake. Now he eats at least 7 (:  Quick, easy and delicious. Ya I'll take that.  My main reason for blogging this?  Again, selfishly I just wanted to remember the recipe without having to go hunt through my ridiculously over stocked pinterest boards... I have a pinning problem/addiction (:
